Description
Back to the Tang-Dynasty China (618-907), Zen Buddhists prepared matcha by roasting and pulverizing the tea leaves, then brewing the resulting tea powder in hot water. The Song Dynasty (960-1279) saw the development of matcha being prepared from steam-dried leaves, which were ground into fine powder then whipped up with hot water. This process soon became a key part of Zen Buddhists daily ritual as they realized the meditational benefits of matcha. In 1191, this ritual of preparing and consuming the powdered tea was brought to Japan by Japanese Zen Buddhist Myōan Eisai.
